Festive Pistachio, Cranberry & Lemon Bliss Balls

Need something quick and easy to whip up for the dessert spread on Christmas day? Or to take along to a festive gathering at a friends place or even a little gift for your colleagues at work? These Festive Pistachio, Cranberry & Lemon Bliss Balls by our lovely friend Penny Benjamin are a GO-TO at this time of year because they're super easy to make, taste amazing and use some of the most festively-coloured ingredients! Happy ballin' babes x

Time 15 mins | Makes about 15 bliss balls


1/2 cup pistachios
1 cup almonds
½ cup cranberries
1/3 cup dates, soaked in warm water for 15min (drained)
2 tbsp lemon juice
1 tbsp lemon zest
pinch sea salt
extra ground pistachios or desiccated coconut to garnish


Place the nuts in a food processor and process until they're a course consistency but still with a few chunkier pieces.
Remove and place in a bowl
Add the dates, zest, juice and salt to the processor and process until it becomes like a paste. Add the Cranberries and pulse until just mixed through.
Add the fruit mixture to the nut mixture. Work the dry and wet together with your hands until it comes together into a big ball.
Roll out tablespoon-sized balls.
Roll in ground pistachios or desiccated coconut if desired.
