3 cups oats
2 cups mixed nuts, chopped ( we like walnuts, almonds, macadamias)
2/3 cup chopped macadamias
1 cup pepitas
1/2 cup coconut flakes
3 cups oats
1 tsp cinnamon
1 scoop of vegan vanilla protein powder
1/4 cup goji berries
pinch of salt
1/2 cup coconut oil
1/4 cup rice malt syrup

You can't go wrong with a good pancake for breakfast. Finding a recipe that is healthy and tastes good can be a little tricky however. I've tried almond meal and find it burns too quickly, I've tried coconut flour and it's just that little bit too dry. Buckwheat or even amaranth flour however both hold up under pressure, and with a touch of yoghurt could even pass for the real deal.
