Eating a healthy and balanced diet is important to me because it helps me keep my weight in check, my mood positive and my energy levels up. As a busy mum, I need all the energy I can get, especially after having adrenal fatigue and knowing how big a role my nutrition to my health.

Bolognese is a classic staple in our house, I usually make big batches for the boys and freeze them for when life is too hectic or I'm on not home to cook. Love whipping up this baby in less than 2 minutes and eat a family meal together. Orlando actually loves this version too which is a win.
Stacked Mexican Quesadilla
These quesadillas are the real deal. They're so good in fact, even my Mexican hubby approves. Loaded with goodness these babies are sure to satisfy. Again you can dress these up with extra avocado, and more green goodness if you feel like you need more.
Creamy Mushroom Cannelloni
Can’t get enough of this tasty spinach and ricotta filling, wrapped in al-dente pasta and covered in a creamy mushy sauce. Love this dish for when you need something a little extra. This baby comes with a generous side of broccoli.
Glazed Tasmanian Salmon
I do enjoy a bit of fish from to time and love the sticky glaze on this beauty. Teamed with some creamy mashed potato and crisp green beans it ticks all my dinner boxes.
