Vegetarian Mexican Stew

Say hola to this sexy mexi vege stew. It's kind of like Chili con carne... except without the carne. My son Orlando loves beans, so we mixed up his favourite vegetables with some kid-friendly, Mexican inspired spices and this is the result. This stew is so simple to make, and you can really make it as spicy or mild as you like. The choice of vegetables is also a guide, you can add capsicum or other veggie favourites like pumpkin or zucchini. The choice is yours!

I am on a serious hemp heart roll at the moment and have created this delicious Roasted Beet and Hemp dip, which you can put on virtually anything. I love it on sourdough, but you can mix it through pasta, dollop on top of a salad, or just eat straight out of the jar. Delish! For my non-vegan friends, you could try it with a little feta or goats cheese!
