Vegan Buckwheat Pancakes

We are constantly blown away by the gorgeous creations on Ellen De Meulemeester's instagram and fell in love with these Vegan Buckwheat Pancakes from her Effortlessly Healthy App and One Healthy Kitchen book. Ellen has been super kind to share the recipe with us for you all to enjoy! They are completely vegan, gluten free and delicious. Have them for breakfast, lunch or dinner - whatever floats your happy, healthy boat.

Time: 15 mins | Serves: 2

Ingredients

150g buckwheat flour
2 Tbsp coconut sugar
1 tsp baking powder
2 big Tbsp coconut yoghurt
1 cup coconut milk or any other plant milk 
A pinch of sea salt
Coconut oil for frying 

Method

  1. Mix all the ingredients in a big bowl with a beater until you get a smooth but thick pancake mixture.
  2. Fry 3-4 mini pancakes at once in a big frying pan. Use enough coconut oil so they don;'t stick to the pan. 
  3. Stack them up and enjoy!
