This time of year can be a minefield to navigate with kids, so the lovely Victoria from Training for Chocolate has helped us fellow mummas out with this yummy Coconut Lime Gummy recipe. Let's be honest, young or old, these are a delicious and nutritious treat to boost gut health and keep those cravings at bay.
1/3 cup cold water
3 ½ tablespoons gelatin powder
270ml can coconut milk
Juice of one lime
Put the water in a medium sized bowl and add the gelatin, stirring straight away until it’s all dissolved.
Set aside for a few minutes while you heat up the other ingredients.
Mix the coconut milk and lime juice in a small pan, and heat gently until almost boiling.
Just before you pour the hot liquid onto the gelatin mixture, break up the gelatin into smaller pieces so it melts more easily.
Pour the hot coco/lime mixture into the bowl with the gelatin and stir until all the gelatin has dissolved, no lumps.
Then simply pour into a glass or plastic container, or gummy moulds, and put into the fridge to set.
Once set (a few hours), pop out of moulds or cut into squares and store in the fridge for a week or so.
This is a great recipe if you’re cutting out all forms of sugar, but feel free to add sweetener if you want to, like a little rice malt syrup.
